At Storehouse Roastery, we believe in sourcing coffee that is both ethical and of the highest quality. By working closely with green coffee importers and building direct relationships with farmers, we ensure that every cup reflects not only superior craftsmanship but also a commitment to sustainability.
Through our partnerships, we support environmentally responsible practices that benefit both the planet and the people behind every harvest.
Cofinet is committed to sustainability through its native tree nursery, providing free trees to small coffee growers. These trees enrich the soil naturally, reducing the need for chemical fertilizers while offering shade that protects coffee plants and encourages bird activity to control pests. The cooler, shaded environment slows cherry ripening, enhancing flavor and improving coffee quality. In partnership with Biomma, Cofinet also works on reforestation efforts to minimize carbon emissions and offset its environmental footprint. Since 2020, they have been planting 70 native trees per month, actively contributing to a more sustainable coffee-growing future.
Cofinet prioritizes water conservation in coffee processing. Traditional washed methods use 41 liters per kilogram of dry parchment, but Cofinet processes 95% of its coffees as Naturals and Honeys, significantly reducing water use. For washed coffees, they recommend dry fermentation, using minimal water to remove mucilage, cutting water usage by 90%. By promoting these sustainable practices, Cofinet helps coffee producers protect this vital resource while maintaining high-quality coffee. Their commitment ensures environmentally responsible processing, reducing water waste and supporting long-term sustainability in coffee farming.
Cofinet offers a free, two-part Internship Program to help Colombian coffee producers master alternative fermentation methods. In part one, farmers spend six days at La Pradera, learning hands-on honey and natural processing techniques. They also taste their own coffee—often for the first time—and receive movable coffee beds at no cost. In part two, Cofinet visits their farms to oversee trial batches, providing guidance and guaranteeing the purchase of the lot, eliminating financial risk. This program empowers farmers to process at least 40% of their harvest using specialty methods, ensuring higher premiums and advancing Colombia’s specialty coffee industry.long-term sustainability in coffee farming.
There are 5 different social projects currently in place at Pedro Gabarra’s farms. Amongst them is the WINGS project. While observing the rising number of injured birds in the region, Pedro and his sister took the initiative of building nurseries to shelter and to release the wild birds to their natural habitat. This project has the support of IBAMA (Brazilian Institute of the Environment and Renewable Natural Resources) and is on its final stages of implementation. The WINGS project also aims to educate people about the importance of environmental balance and the harmful effects of animal trafficking.
In 2008, Flavia and Gabriel launched GIMA(The Intercity Games for the Environment), a project that aims to promote social and environmental responsibility and to create environmental awareness on early generations. GIMA unites hundreds of children from five surrounding towns on a day to celebrate life and the environment every year. During this there are exciting games and prizes that will change those kid’s lives forever. In 2018 we’ve raised enough money to donate 96 push-bikes to children who joined GIMA. All of that was only possible through the good-will of very kind coffee roasters from all over Australia.
